We have been so busy recently! We've all had some yucky bug and finally we are all getting better! But sometimes, I feel like by the time dinner time comes if i haven't used my bff the crock pot I am too pooped to muster up the energy to cook. So- there are a few recipes I found that are great for family's or a busy life! I tell ya, the crock pot is a must for a busy mom! I use that thing to cook meat, makes roast, soup, so many things! Not to mention it makes your meat so incredible and tender! So- I wish I could take credit for this recipe- but I can't! I have a sweet friend Mrs. Fay that has been a huge help to our little family of 4 since miss ellie was born. We like to call her our b-ham g-ma! She loves playing with mr. grahambo and giving ellie sugarrrrrrrrrrr as she calls it! She brought me these muffins one week and I loved them! I love anything that is loaded with fiber! The greatest thing about these muffins is- it makes a lot- but the batter keeps in your frig for a 4 weeks- so make a few if you have guest or at the beginning of the week for your morning breakfast! I am not a raisin fan at all- but I will eat these fab brand muffins! It will make a lot so put the batter in a storage safe bowl for your frig!
Bran muffins!
1 15-oz box of raisin bran cereal
3 1/2 cups of sugar -it seems like a lot but for the amount of batter- u need it!
5 cups all purpose flour
2 tsp salt
4 eggs
1 cup veg oil
1 quart butter milk
2 tsp vanilla
2 tsp cinnamon
1 1/2 tsp ground clove
1 1/2 tsp ground nutmeg (i put more!)
preheat oven to 400. mix dry ingredients first then add the liquids. Put in a large bowl ( i use my kitchen aid mixer) and let it mix for about 3 minutes. Fill muffin tines 2/3 full and bake for 15 mins.
I make a few at a time- sometimes the batter gets dryer in the frig so add a little milk if it's been a few days- they're great yummy breakfast to go! enjoy!
